I love to come to Chicago, this time I decided to go Burger hunting, the last one I had was a while ago so I did a little research and one place took my interest David Burke’s Primehouse. The place is in the James Chicago hotel, offering modern American cuisine since 2006, as any good steakhouse hand selecting their beef USDA prime, and a menu under control of executive chef Rick Gresh.

I went for the burger but always had a peek to the menu and spotted a must, a Wagyu beef sashimi as starter and the Greshburger. The sashimi a some sort of carpacchio really thing slices of Wagyu beef with Himalayan salt, mushroom chips, and a truffle mayo. It was sublime, the flavour is great, a perfect start for the diner. Then the burger, 40 day dry aged shaved prime rib, smoked mozzarrella, on a potato bun, morroccan ketchup, with onion rings. The flavour was excellent, the beef and prime rib perfectly cooked medium rare, the mozzarella played perfectly with the beef not overpowering the amazing prime beef, the sauce complemented, finally the onion rings were great, nice battered and huge.

Excellent burger, next time I will go for a steak I’m sure they are amazing, and definitely more Wagyu sashimi.

Burke reminds me the Seinfeld episode “The Package” when Elaine is having problems with doctors.
Elaine: I need to see Dr. Burke right away. This rash is spreading
Attendant: He can't see you Miss Benes, he's busy
Elaine: Oh come on. Have some compassion. Okay well I hope it's contagious
