The other day I was in Soho trying to get into Koya, but after failing to get a table and a bit of wandering around the area I bump into Tonkotsu. I’m almost sure that I read about the place in Hanna's Swedish Meatballs these days Nordinary. Their speciality a pork bone broth type of ramen. Petite place in Soho, same owners of Tsuru, no reservations, communal tables, a strong aromas as soon as you get inside the place.

One thing I learnt about ramen, intense broth is the heart, fresh noodles are essential, pork is a common addition, and marinated gooey egg yolk is a must.

I got some shiitake and bamboo shoot gyozas and king prawn katsu as starter. The gyozas were nice, good flavour. The prawn perfectly cooked, crispy breaded coating, again quite nice.

The main obviously a Tonkotsu ramen. Strong broth, they cooked the pork bones for 18hrs giving a silky consistency. Pork belly, yes a three hour cooked belly slices, nothing better than the five layers of happiness in a bowl of ramen. To complete the picture thin noodles, bean sprouts, spring onions, and the soy base marinated egg.

I don't have many comparisons for my ramen experience, but I consider the flavours were all there.

This type of soup reminds me the Seinfeld episode “The Soup”
Bania: Ahh, you know what I think. I’m just going to have soup. Yeah, I’ll save the meal for another time
Jerry: Another time? What other time?
Bania: I had a hot dog earlier. I’m not that hungry
Jerry: No, no, Bania, no. This is the dinner. The soup counts
Bania: Soup's not a meal. You're supposed to buy me a meal
Jerry: I’m not stopping you from eating. Go ahead and eat. Get anything you want
Bania: I don't want anything but soup
Jerry: Then that's the meal
Bania: But I had the hot dog
Jerry: I didn’t tell you to have a hot dog. Who told you to have a hot dog?
Bania: Hey, I give you a brand-new Armani suit, and you won't even buy me a meal? Jerry: All right, fine. Get the soup!
