Cachaco's Ribs Venezuelan Style [On The Road: Caracas/Recipe]

You know Venezuelans love BBQing, so every time I go visiting the family I ask my friends to prepare a nice one to get together and enjoy some steaks, chicken, sausages, and in this occasion ribs. My friend Cachaco is a master doing the ribs, he let’s them marinating in his special and secret recipe that includes onions, lots of garlic, malt and coke, at least that’s a couple things I have seen when he’s prepping.

For the BBQ he uses a mix of coal and wood, it’s kind of funny watching him cutting the wood as a proper lumberjack. We got two cuts of meat sirloin and skirt, and the famous ribs, as a side potatoes and guasacaca which is basically the Venezuelan interpretation of guacamole.

The ribs were superb even tough Cachaco was nagging they weren't as good as he expected, whatever! The sirloin perfectly cooked medium rare, and the skirt was juicy and the flavour beyond imagination. The ribs were magic, great the flavour, and it's like butter they disintegrate in your mouth, I should bring Cachaco here to London and open a food truck, that would be a hit. The guasacaca was rustic, powerful, and very typical. I will let you with my recipe for a real and authentic Venezuelan Guasacaca, just like my mom used to make.

Guasacaca 

1 Onion 
2 Green peppers 
2 Ripe avocados 
4 Garlic cloves 
½ Tomato 
¼ Cup chopped coriander 
¼ Cup chopped parsley 
½ Teaspoon of chopped chilli pepper 
1 Tablespoon olive oil 
2 Tablespoon vinegar 
1 Tablespoon of Worcestershire sauce 
Salt and black pepper to taste 

For a rustic look, chop the avocados, the peppers, tomato, and the onion, mix them in a bowl, then finely chop the garlic, coriander, parsley, and chilli pepper, add to the bowl stir and mix, finally add the olive oil, vinegar, the Worcestershire sauce, salt and black pepper to taste. If you prefer a more fine and sauce like look, you can add all the ingredients in a food processor and blend. Also if you’re not too much into spicy kicks get rid of the chilli pepper.

To this day, they bring it up. It was the single most damaging experience in my life, aside from seeing my father naked

Chapa’s Burger [On The Road/BurgeReview: Caracas]

My compadre Chapa is almost as obsess as me with burgers, we are always discussing which place is good, what worked what didn't, he loves Five Guys, I think they’re pretty decent, and I still have the benefit of the doubt regarding In n Out he basically hate them. The thing is he always tells me at the end that his burgers are the best ones. I usually see him when visiting my hometown, see the family, godson, and friends, as he prepares a pretty good solid 5 star BBQ, some might say not as good as the one that Cachaco does but a pretty good one.

After a fiasco in Caracas, which I will tell you more in a later post, he decided finally to invite me to try his creation. Coal BBQ to cook the patties, they were sourced from a local butcher to be sure to have good meat quality. The toys for the burger, caramelized onions with a balsamic reduction, a special curry mustard/mayo, rocket, bacon, and melted brie, sounds good isn't?

Let me tell you it was awesome and is not because he’s my compadre I would have enjoyed criticising him if the burger wasn't right, but everything was spot on, the flavour of the meat, the melted brie, the onions, the sauce, the bacon, the rocket, everything in balance, awesome. The only thing I would have change is to have the meat cook less to get a medium rare but that’s just me.

Coco Thai a lounge with a view

A good thing about Caracas is that you can find any type of cuisine you want, and the execution is quite good. So one of my stops this time was for Thai cuisine, Mary’s favourite have to say Coco Thai & Lounge. The place is in the Tolon Fashion Mall, quite famous for the gastronomic movement due to a dedicated floor to restaurants (5th floor). Typical Asian decoration and a terrace with an excellent view of the Avila. Menu is basically Thai with some additions of other Asian cuisines, mainly Japanese rolls, and a good cocktail list.

We decided to share different dishes and mainly sushi rolls, so we went for a tempura salmon (Coquitos de Salmon), an special wakame salad, and then three different sushi  rolls Alaska special, Spicy Tuna, and a Tempura one.

The food was excellent, the coquitos were great, salmon with cream cheese tempura was superb, with a drizzle of a sweet mustard sauce just excellent, the wakame special salad was the best dish of the night, light and tasty, with tempura shrimp and octopus, just awesome. Sushi rolls were perfectly executed, which is pretty standard for Caracas, but this ones where definitely spot on. Alaska special, quite good, salmon, avocado, and cream cheese, with salmon eggs, excellent, then the spicy tuna quite good, and finally a shrimp tempura with cream cheese and crab, nice flavours.

Excellent food, nice ambience, superb view, a place to relax and enjoy a couple drinks.

Peterman: And, in a tiny way, I almost feel responsible. I'm the one who sent him to Thailand in search of low-cost whistles. Filled his head with pseudoerotic tales of my own Opium excursions. Plus, I have him some phone numbers of places he could score near the hotel 
Elaine: Look, uh, Mr. Peterman, the fact is that I was planning on breaking up with Zach anyway. He was cheating on me! 
Peterman: Damn it, Elaine. That wasn't Zach. That was the yam-yam. Now, he is going cold turkey, and you will be at his side 
Elaine: Oh. Well, you know, I had planned to uh… 
Peterman: No buts, Elaine. Or I will strip you of your associate status. Uh, P.S., the first twenty-four hours are the worst, better bring a poncho

A Pizza in El Hatillo

If you’re visiting Caracas you've to pass by El Hatillo, southeast of Caracas this small town with colonial architecture, art galleries, handcraft products such as pottery and other folkloric souvenirs, music festivals including Venezuela most recognised Jazz Festival, and gastronomy are the main attractions.

One of the popular places is a pizza joint called Das Pastelhaus. Wood oven, a nice terrace, busy dining, room, and a crunchy pizza it’s what you will find. I went with Mary to try it again as it was at least more than 6 years since I had one. 


The Place
We shared two pizzas, one cream based instead of tomato, with chives and mushrooms, it was great, amazing flavour, the crust is really nice, and the other one a traditional, with black olives, Serrano ham, rocket, and shaved parmesan cheese. It was perfect, great flavour, and same awesome crust.

On top of Caracas

If you visit the Capital you have to go to El Avila, National Park that consist in mountainous region of the north central Venezuela, separating Caracas with the Caribbean Sea, and reaching a little bit more than 2.7 metres above sea level. You can go hiking, with an off road vehicle, or by cable car, have your pick.

There are plenty of things to do there, hiking expeditions, exercise in the famous Sabas Nieves, or enjoy a nice day and have lunch or dinner in Galipan. In Galipan you have breath taking views of La Guaira and Caracas, also you can wander around and have one of the best pork sandwiches around town, or just have some strawberries with cream. We decided to go to one of the most famous restaurants there Granja Natalia

The view
A place for relaxation and culinary treats, with the view of the Caribbean Sea, Chef Angel Sanchez Medina make sure to keep great standards with a menu of international flavours. We shared some Thai rolls, which were spot on, then as tradition we got some tequeños (cheese sticks), they were great, nice melted cheese, chicken skewers followed, they were quite good, with a peanut Thai sauce and coconut milk, finally a Spanish omelette (Tortilla), which was nicely prepared.

My starter was the famous Natalia soup, tomato cream with carrots, onions, roasted garlic, and finally roasted almonds, spectacular, the flavour was great, nice balance. Then I went for the T Bone, a perfectly cooked meat at the grill, great flavour again.

The Arepa Strikes Back

Going to Caracas and not eating an Arepa after a night out is like going to Paris and don’t visit or even see the Eiffel tower. There are plenty of places to have the Venezuelan official after party snack, but two places caught my attention after recommendations of long time friends.

We are talking about monster style arepas, nothing fancy, the type that could make any foodie enthusiast scream for forgiveness and cry of joy, hungry mobs flock to these places to have a bit of these beautiful but yet grotesque corn bread filled with unimaginable things.

My first stop was El Budare del Este typical arepera, the joint has a long counter with all the fillings, tables, and a menu that goes from soups, salads, to the beloved arepas. But there are always some off the menu arepas, those are the ones we want, they give them nicknames such as La Llanera, Santa Barbara, La Corrida, etc. The one here to try has grilled diced meat, unique Venezuelan white cheese Telita, avocado, tomato, and some peppers. This arepa is delicious, there is so much going on here the meat perfectly cooked, the punch of the Telita cheese, and some drops of a local guasacaca (similar to a guacamole) to die for.

Second and last stop was La Caracas de Ayer, the place has this period decoration to remind you of the old Caracas, full of old pictures everywhere, but yet the same long counter and table display of any other arepera, looks like your grandmother opened an arepera at her house. The arepa here is quite similar, they change the cheese instead of Telita they use Guayanes which is another Venezuelan white cheese, finally they also add a pork chop. The flavours again is great, awesomeness in a grilled corn bread.

Back in Caracas for more BBQ

As usual last Christmas I went back home. Yes my backlog of posts is huge… I know… anyway I went back home and as usual over that side of the new continent they received me with a BBQ. A real Venezuelan Parrilla. Meat, sausages, beers, and all the trimmings and toys.

This time the cook was my friend and compadre Chapa, sorry there is no translation for compadre but I’m the godfather of his youngest kid if that helps clarify, he did an amazing job due to the absence of Luis or Cachaco (the usual cooks), we enjoyed a night of heavy drinking, a perfectly medium rare cooked meat, and lots of sausages, with a nice salad from my comadre Vero to balance the meat ingestion, although we missed her chimichurri to be honest.
